Pretty sure just using the 8.1 will undo all changes that NukeSentinel would need to load. Mainly, make sure there is no calls in mainfile.php to load NukeSentinel (8.1 default should not have any)

Are you using an addons? I know some of them are coded for older versions of phpNuke and may not allow this feature to work as intended

Looks like someone tried to put their Google Analytics code all over your pages. You'll need to go through your server access logs to determine how this guy got in
