I don't use 8.0, but € seems to be added just fine with the WYSIWYG editor. It could be the filtering added in 8.0 that doesn't allow this to work. I'm not surprised, there are so many problems with 8.0.
FB should really work on fixing and testing his broken code, but he doesn't. So I don't recommend using 8.0 at this point. Better to use a stable version like 7.6 + Patched files + Sentinel. Or for a more integrated solution, RavenNuke from http://ravenphpscripts.com
