I would recommend removing all your old files first from where you want it installed. Then upload the phpNuke 8.1 files. Re-edit your config.php with the database settings. Then upload the upgrade scripts and run them sequentially to get from 6.5 to 8.1

In my phpNuke package i have upgrade 65-66.php but not upgrade65-81.php

You run them all sequentially... 65-66, 66-67... until you get all the way up to 8.1

Your best be is if you wanted to upgrade, then upgrade to raven nuke, its more secure then phpnuke 8.0+, Its phpnuke 7.6 which is by far the most secure version of Nuke also it has Sentinal pre installed. Its well worth taking a look into.
